British Baked Black Eyed Beans ( Lobia) are super protein packed breakfast idea but better, they are homemade and homemade is always best. beans are cooked with flavorings in tomato sauce for a taste of a British classic.Beans on toast / pav and even breakfast.You can try with sausage rolls also.... Ingredients:
- 1 cup boiled beans ( lobia / kidney beans according to your choice)
- Kosher salt and freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped (about 1 cup)
- 2 large cloves garlic, finely chopped (about 1 tablespoon)
- 2 tablespoons tomato paste
- 3 bay leaves
- 2 1/2 cups tomato puree
- 8 slices homemade pav/ bun / bread
- Chopped parsley, to garnish / Or bapsil leapves / mint leaves.
- In a large pan add oil chopped garlic, chopped tomatoes and bay leaves and tomato paste.
- Cook the mixture for about 10-15 mins .
- Add herbs, seasoning according to your choice and boil beans cook for 5 min.
- Side by side grill your toast with homemade ghee Or butter.
- Add salt and black pepper in beans mixture serve in a bowl .
- Toast bread, then top with a generous portion of beans and garnish with chopped parsley if desired.
