RAJASTHANI KHOBA ROTI

Looks like a piece of art indeed. Rajasthani Khoba roti is the prettiest of all Indian rotis.  I am excited  to share this one recipe👩‍🍳This roti is known by different names- some call it khoba roti, some call it jadi roti and some rot.Traditionally Khoba roti is smeared with lot of ghee ( clarified butter) and is served with a side of dal or kadhi, veggie and chutney.Believe me you need to try this one at least once in your life time.

It originates from Rajasthan, a state in Western India, popular for its music, colorful clothes, sand-dunes, old forts and definitely food. Oh, the food is excellent. When it is put on the tawa, you are required to make deep cavities with your thumb on the upper side and then pour lots of ghee into the cavities and cook till crisp. Remember to cook it on a low flame; considering it is very thick, one should ensure it is not left under-cooked."❤👩‍🍳🍃🙏

Ingredients:

3 cups wheat flour 

3 tbsp melted ghee 

1/2 tsp salt

1 1/2 - 1 3/4 water for kneading dough.

Instructions:

  • flour in a big bowl
  • Add salt to the flour and mix well.
  • Add melted ghee .
  • Rub the flour between your fingers so that entire flour is well coated with ghee .
  • Add water little at a time to knead a stiff dough..After kneading it smooth just coat it with some ghee and let it rest covered for 15 -20 mins atleast .
  • Meantime pre heat your tawa ( here I use iron tawa on my recipe)
  • Divide dough in 3-4 equal balls .
  • Roll it without dusting with dry flour approx 1/2 " thick round . Trust me it wont stick on the rolling pin .
  • Now make slashes with your fingers on one side .
  • Place it on a warm tawa.
  • Once it's lightly cooked from one side cook on other side. When turns golden brown switch off the flame.
  • Drizzle some ghee on the top .
  • Enjoy with Dal, sabzi .
